Late Night Sonoran Dogs from Tanque Verde Guest Ranch  

Black Beans

2 cups  soaked black beans

4 cups  water

1 TB  Cumin

1 TB  Chile powder

1 TB   Mexican oregano

1TB   Coriander

1TB  Smoked paprika

1/2 pound Mexican chorizo

2 each  Bay leaves

S&P  TT

1/2 bunch cilantro

Cook beans on low heat till tender with all ingredients. Drain excess liquid and hold to side. Use submersion blender to pulverize beans and incorporate salt, pepper and cilantro adding liquid till smooth.


Pico de Gallo

2 each  Roma tomato, seeded and diced

1/2 red onion, diced

1/2 bunch cilantro, chopped

1/2 poblano pepper, diced

1 each  Lime, juiced

1/2 tsp.  olive oil

S&P  TT

Fold ingredients together.


Cilantro Crema

1 cup  sour cream

2 each.  Limes, juiced

1/2 bunch cilantro, chopped

2 each  Garlic clove

1/2 tsp.  cumin

S&P  TT

Place all ingredients in blender, and blend well.


Sriracha Mayonnaise

1/2 cup heavy mayonnaise

1/4 cup srirach

Fold together.
